Roasted red peppers stuffed with beer borlotti beans

A month ago, I made a version of Brian's roasted poblano chili rellenos. They were great, but it was a lot of work, and required panko crumbs and an egg wash.  I found an easier recipe on Cookie and Kate, so I played around with what I could find here.

I used red point peppers, stuffed them with borlotti beans that had been cooked in half a bottle of beer with shallots and garlic.  I sauteed the garlic and shallots, then added the beans and beer, let it simmer until reduced, then stuffed the peppers with the beans.  I put some goat cheese crumbles in, then roasted them at high oven heat for something like a half hour.  They were getting soft but not roasted, so I put them on a cookie sheet on the top rack until they browned.

I served it with a little Slankie brand lowfat cheese shreds on top, and a bit of Mexican rice.  On the side, I invented a sort of cavolo nero kale and green bean thing with some tomatoes and salsa in it.  Mexican kale green beans, I guess.  Pretty good.  I had reserved some garlic and shallots from earlier, so I could stir that around with the green beans too, to bring the flavors together.

Only 7 points per serving.  Borlotti beans are really low in points, and there wasn't much rice at all.


Goat cheese frittata with roasted carrot frites

It's almost zero points when you roast carrots, but they taste almost like French fries.  I slice them, then roast them in the combi oven on the top-rack grill for about 5 minutes, flip them with tongs, then grill them some more.  This time, I used a curry roasting sauce adapted from Isa's amazing curry tofu tacos.  I just mixed a little olive oil, soy sauce, and hot curry spice on a plate and stirred it with a fork.  Then rolled the sliced carrots in it before roasting.  Yum!

For the asparagus frittata, it's basically the recipe from Cookie and Kate.  I added some cherry tomatoes for color.

The whole meal was just 11 points, and you get two servings of frittata.


Grilled cheese sandwich and side salad

Decent Saturday lunch.  Some leftover cottage cheese, (1 point) and a zero-point salad.  The sandwich was made with a 48+ Gouda cheese (Jong) slice, so it was 7 point - 3 for the cheese and 4 for the bread.

OK, so mostly I just need a place to save photos I take of lunches and dinners I make.  I'm calculating points with weight watchers, and I can never remember what I ate a few weeks ago.  Hopefully by adding photos and details here, I will be able to plan meals better in the future.
